How refreshingly fresh does this look?
I love this one for a summer evening. We had this last night in the middle of September and it was still a great choice. It’s fairly clean and really was yummy! If you’re on the 45-day shake plan, just remember that the watermelon in this will need to be considered as one of your three portions of fruit allowance per day.
Top tip: The key to making this healthy dinner really satisfying is to get the biggest prawns you can find! I also added a corn on the cob and avocado which worked really well. I actually used melon in a packet rather than buying a whole watermelon and it worked great.
