Thursday is definitely my favourite day of the week. You have laboured hard through the week, the weekend is almost here but not quite yet, so you still have something to look forward to.

Today I’m celebrating Phuza Thursday with my ‘ Rum and Lime infused Strawberry Bubbles’. This cocktail is not sweet at all, which is perfect for today. I’ve been sweet the whole week….ha ha ha jokes :).
What do yo need?
- The bubbles- Pinot noir Sparkling wine

Strawberries

Ginger
- White rum
-
Castor sugar
Method
In a small bowl put in 3 halved strawberries, 1 tbs of castor sugar, 25 ml of lime and 25 ml of rum. Mix well and let infuse for at least 30 min. You can add more sugar if you want it sweeter.
Then transfer the halved strawberries into a champagne flute an top, with a slice of ginger and top with the bubbles.
The ginger gives this a bit of an edge, a spicy finish that lingers on your tongue for a few seconds after you swallow.

Garnish with a strawberry and Enjoy 🙂
