

Phuzaaaaa Thursday! It’s my favourite day of the week and I’m rather thirsty after a long day at work. And I’ve been good this week, I’m sure my liver appreciates the break.
I got a bottle of ginger liqueur at the bottlestore yesterday and I can’t wait to try it in a cocktail. Ginger is one of my go to ingredients for cocktails. Ginger at number one, with mint leaves coming in at number two.
The weather is so beautiful today, I think I’m going to try something fruity and summery. When I think summer, I think warm bright colors. Let’s see what I can come up with.
What do you need?
- Ginger liqueur

Vodka
-
Lime cordial
-
Pineapple slices
-
Pineapple juice
-
Mixed berry juice
-
Fresh ginger

Sugar syrup – ( dissolve 3 tbs of sugar in 25 ml of warm water)
Because I’ve been good, I’m rewarding myself with 2 version of this cocktail; a pineapple version and a berry version.
One of my favourite apparatus in my kitchen is my shaker, it fulfills a lot of my cravings, and it’s coming into good use again today.

Method
In a shaker, put in 3 slices of ginger and 10ml of sugar syrup and muddle until ginger is almost a paste. Then add in 4 fresh pineapple wedges, muddle together.
Pour in blocks of ice, then 50 ml vodka, 25 ml ginger liqueur, 15 ml lime cordial and top with pineapple juice or berry juice.
Shake and strain.
Garnish with a pineapple wedge and short straw(cut in half).
Pineapple and ginger make a very good flavour marriage.
