Strawberries & Coconut Phuza Thursday!


It is finally Thursday again. I am so exhausted I cannot even keep track of the days anymore. I’ve had the longest 2 weeks, I’ve pretty much worked every day and some nights.

It doesn’t help that work has been so emotionally draining this week. I feel more like a psychologist and social worker than a doctor. It is my fault though. I can’t just let things be. I tend to enquire about all aspects of my patient’s lives, and when something is amiss, I cannot not do anything about it. And this week I’ve dealt with a lot of cases of all kinds of abuses, exhausting!

Anyway, I’m just excited it’s Thursday and with the Eskom power cuts, it looks like my Phuza Thursday might be my dinner as well.

Today I’m drinking a simple but simply delicious drink. I’ve always been a fan of coconut, from milk, cream, juice, liqueurs to even coconut lotions. So I’m going to the Caribbean with coconut flavoured rum today.

This will be in combination with a precious find from a strawberry farm I went to last week, for the work’s end of year party, and it’s delicious strawberry liqueur.

So, it’s strawberries and coconut!

What do you need?

  • 50 ml coconut flavoured rum

  • 30 ml of strawberry liqueur

  • 100ml of lemonade

  • fresh strawberries

  • slices of fresh lime

Basically combine all of the ingredients, putting in the strawberries so they can soak up all that sweet alcohol. It tastes like some sort of dessert when you get to it at the bottom of the glass.












It is delicious with a perfect balance of sweetness. Enjoy:) .
